Course Outline

We’ll meet Sunday’s, 4-6pm est. via zoom on March 24th, April 7th, April 14th, April 21st, April 28th, and May 5th

  • The prep list is a crucial part of daily restaurant success. Chefs live and die by checking things off their prep list. This first prerecord video we will go over the conscious cooking prep list so that you walking into week one set up for success.

  • Master the fundamentals with me as you delve into knife skills, creating flavorful dressings, and perfecting seasoning. Create a delectable seasonal panzanella with a harmoniously balanced dressing.

  • Explore the art of sautéing and roasting as I guide you through the creation of blackened sweet potato tacos with salsa verde and cabbage slaw. Learn essential techniques to elevate your cooking.

  • Dive into the world of slow food with me. Craft a comforting bone broth and indulge one of my favorite dishes — harissa braised chicken thighs with chickpeas, sautéed peppers, and creamy tahini.

  • Become a beef aficionado with me. Learn the art of perfectly searing and basting a steak. We’ll create a flavorful compound butter and a quick seasonal side to go with it.

  • Experience the versatility of pasture-raised chicken. This week expands beyond rotisserie chicken and instills confidence both cooking and handling this nourishing protein. We’ll craft a crispy skinned and completely deboned half chicken with a proper pan jus.

  • In our final week, participants will come together to prepare and savor "The Big Dog Meal," a dish determined by group consensus. This final session is an opportunity to showcase the skills acquired throughout the course, as we prep and execute the chosen dish in unison. Whether you invite friends over for a lively gathering or revel in the experience solo, it's a chance to celebrate the joy of cooking and connection.

Meet your culinary guide

I’m an environmental guardian, mindful michelin starred chef, and chopped champion. I use my 15+ years of culinary experience and knowledge of regenerative farming to guide people back to an integral form of nourishment. Becoming part of a collective symbiosis, my approach to nutrition is much more than simply eating properly. The body is a complete ecosystem, not just an isolated event. My intention is to share this knowledge for us all to heal our bodies on a cellular level, and to revive Earth, or as I like to call her, pachamama.
